Anyway, when I make them, I roll the dough out onto my big round pizza stone, and then cut them into little "worms" using the pizza cutter. It seems like they puff up and rise a bit no matter how small I cut them, and knowing hubby likes them tiny, I can go back and cut them smaller if I find them a bit too thick. I have been trying to tame my own disbacterosis (aka too much yeast in me) by all natural methods, such as limiting sugar, consuming probiotics, and taking raw garlic when we catch that (rare these days) cold. Garlic can kill yeast, but mine don't seem to know that, lol. About 6 months ago, it got so bad that I went to the doctor, and got a prescription for diflucan... which didn't work... as well as I was assurred it would, but then after that the rest of the stuff seemed to work, so I shrugged it off. However, it seems like I walk a fine line to this day where the yeast are just waiting to overrun me at the drop of a hat. So I bought more.<br /><br />I was happy with the popping ratio - probably 3/4 of it popped and what didn't pop was nice and toasty and crunchy so we ate it anyway. I read about soaking it here so I gave it a try but it didn't make any difference that I could tell- possibly a little worse actually.<br /><br />We're a whole foods/organic family so I was glad the JustPoppin.com popping sorghum is organic or I wouldn't have even tried it in the first place. It's definitely a yummy different snack. The doctrine for keeping syrups is just a few weeks in the fridge with honey. They keep longer with alcohol added as a preservative.
