I have been musing about a GF food blog (what? another one? I hear you say?). No, I would never be able to post a recipe a day! I was thinking more along...well, never mind.<BR/><BR/>On sourdough starter, I began mine last week, and it seems to be working. Not that I have a wonderfully frothy mass like those who use gluten based flour and or wheat. Yet my starter has lift and bubbles, none the less. And I think that's the important part. It's "proofing" I suppose.<BR/><BR/>I started mine with simply Bob's Red Mill all purpose GF flour mix (burgandy red label). When I ran out, I switched to his GF Been flour mix. Both flours are working equally as well. <BR/><BR/>Because of the cost of waste, I'm making it small scale...2 cup bowls! I started it with just a cup of flour and room-temp distilled/purified water. When I buy more flour this week, I'll give it a loaf test!<BR/><BR/>One bowl I keep tightly covered in plastic, the other is uncovered (I store them in the cold oven).
